The ultimate blueberry muffins that are moist and packed with flavor, perfect for breakfast or a snack!

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the melted butter, milk, eggs, and vanilla extract.
  4. Combine the wet and dry ingredients until just mixed, then gently fold in the blueberries.
  5. Grease a muffin tin and fill the cups with the batter.
  6. Bake for 18-20 minutes or until golden and a toothpick comes out clean.
  7. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add a sprinkle of lemon zest to the batter.
