  • 2 cups fresh strawberries, hulled and sliced
  • 1 tablespoon olive oil
  • 1 tablespoon honey
  • 1 cup ricotta cheese
  • 1 teaspoon vanilla extract
  • 4 slices crusty bread
  • Mint leaves for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, toss strawberries with olive oil and honey. Spread them on a baking sheet and roast for 20 minutes.
