2 cups fresh strawberries, hulled and sliced
1 tablespoon olive oil
1 tablespoon honey
1 cup ricotta cheese
1 teaspoon vanilla extract
4 slices crusty bread
Mint leaves for garnish
Instructions
Preheat your oven to 375°F (190°C).
In a bowl, toss strawberries with olive oil and honey. Spread them on a baking sheet and roast for 20 minutes.
While the strawberries are roasting, mix ricotta cheese with vanilla extract in a bowl until smooth.
Toast the slices of bread until golden brown.
Spread whipped ricotta on each slice of toast, then top with roasted strawberries.
Garnish with mint leaves before serving.
