A delicious and wholesome recipe for vegetarian stuffed bell peppers filled with rice and vegetables.

Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 cup cheddar cheese, shredded
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix the cooked rice, black beans, corn, chili powder, cumin, garlic powder, and salt.
  4. Stuff the mixture into the bell peppers and place them in a baking dish.
  5. Drizzle with olive oil and sprinkle cheddar cheese on top.
  6. Bake for 30-35 minutes or until the peppers are tender.
  7. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add diced tomatoes to the filling.
  • Vegetarian substitutes for cheese can also be used for a vegan version.
