  • 4 pieces chicken thighs
  • 1 cup rice
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon thyme
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 can coconut milk

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and bell pepper, sauté until softened.
  3. Season chicken thighs with garlic powder, paprika, salt, black pepper, and thyme, and add to the pot.
  4. Brown the chicken on all sides.
  5. Add rice, chicken broth, and coconut milk to the pot.
  6. Bring to a boil, then reduce heat and cover. Cook for 20-25 minutes until rice is tender.
  7. Remove from heat and let it sit, covered, for another 5 minutes.
