- 2 cups grated zucchini
- 1 can (15 ounces) black beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the grated zucchini and black beans. Mash the black beans with a fork until mostly smooth.
- Add breadcrumbs, onion, garlic, cumin, chili powder, salt, pepper, and egg to the bowl and mix until well combined.
- Form the mixture into patties and place them on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes, flipping halfway through, until they are golden brown.
- Serve on buns with your favorite toppings.
