Zucchini Black Bean Burgers

These Zucchini Black Bean Burgers are a delicious way to enjoy veggies in a guilt-free burger.

  • 2 cups grated zucchini
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the grated zucchini and black beans. Mash the black beans with a fork until mostly smooth.
  3. Add breadcrumbs, onion, garlic, cumin, chili powder, salt, pepper, and egg to the bowl and mix until well combined.
  4. Form the mixture into patties and place them on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes, flipping halfway through, until they are golden brown.
  6. Serve on buns with your favorite toppings.

Notes

  • For a vegan option, replace the egg with flaxseed meal.
  • Feel free to customize the spices to your taste!
