These Wonderful Coffee Cake Muffins feature a delightful crumble topping that can be made in just one minute, perfect for a quick breakfast or snack.

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ¾ cup brown sugar, packed
  • 1 tablespoon ground cinnamon
  • ¼ cup all-purpose flour for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, eggs, vanilla, and sour cream.
  4. Combine wet and dry ingredients, stirring until just mixed.
  5. In a small bowl, mix brown sugar, cinnamon, and flour for the topping.
  6. Fill each muffin cup halfway with batter, sprinkle some crumble topping, then add more batter and top with more crumble.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
