1 cup pumpkin puree
1/2 cup almond milk
1/4 cup coconut oil
1/4 cup brown sugar
3 cups all-purpose flour
1 tbsp active dry yeast
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp salt
1/2 cup vegan cream cheese
1/4 cup powdered sugar
Instructions
In a bowl, mix pumpkin puree, almond milk, coconut oil, and brown sugar until smooth.
In another bowl, combine flour, yeast, cinnamon, nutmeg, and salt.
Gradually add the wet ingredients to the dry ingredients, kneading until a dough forms.
Let the dough rise for 1 hour in a warm place.
Roll out the dough and spread a mixture of cinnamon and sugar over it.
Roll the dough into a log and slice into rolls.
Place rolls in a baking dish and let rise for 30 minutes.
Bake at 350°F for 25-30 minutes or until golden.
Mix vegan cream cheese and powdered sugar for frosting and spread it over the warm rolls.
