A creamy and hearty vegan mushroom stroganoff that everyone will love.

Ingredients

  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 3 tablespoons soy sauce
  • 1 teaspoon paprika
  • 8 ounces pasta of choice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pan, heat the olive oil over medium heat.
  2. Add the onions and garlic, sauté until translucent.
  3. Add the mushrooms and cook until softened.
  4. Stir in the vegetable broth, coconut milk, soy sauce, and paprika.
  5. Bring to a simmer and cook for about 10 minutes.
  6. Meanwhile, cook the pasta according to package instructions.
  7. Drain the pasta and add it to the mushroom sauce.
  8. Toss to combine and let cook for an additional 2 minutes.
  9. Serve hot, garnished with fresh parsley.

Notes

  • For extra creaminess, add a tablespoon of nutritional yeast.
  • Feel free to use any pasta type or even zucchini noodles for a low-carb option.
