  • 2 cups Biscoff cookies, crushed
  • 1/2 cup vegan butter, melted
  • 1 cup raw cashews, soaked
  • 1/2 cup coconut cream
  • 3/4 cup powdered sugar
  • 1/4 cup Biscoff spread
  • 1 tablespoon vanilla extract
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix crushed Biscoff cookies with melted vegan butter to form the crust.
  3. Press the mixture into the bottom of a springform pan and bake for 10 minutes.
  4. In a blender, combine soaked cashews, coconut cream, powdered sugar, Biscoff spread, vanilla extract, and lemon juice. Blend until smooth.
  5. Pour the cheesecake filling over the crust and smooth the top.
  6. Chill in the refrigerator for at least 4 hours, or until set.
