- 2 cups all-purpose flour
- 4 large eggs
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1 cup speculoos cookies, crushed
- 1 cup whipped cream
- In a bowl, whisk together flour, sugar, and cinnamon.
- Add eggs, milk, butter, and vanilla; mix until smooth.
- Heat a non-stick pan over medium heat and pour in batter to create thin crêpes.
- Cook for 1-2 minutes on each side until golden. Repeat with remaining batter.
