A deliciously indulgent crêpe cake layered with vanilla and speculoos flavors.

Ingredients

  • 2 cups all-purpose flour
  • 4 large eggs
  • 2 cups milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 cup speculoos cookies, crushed
  • 1 cup whipped cream

Instructions

  1. In a bowl, whisk together flour, sugar, and cinnamon.
  2. Add eggs, milk, butter, and vanilla; mix until smooth.
  3. Heat a non-stick pan over medium heat and pour in batter to create thin crêpes.
  4. Cook for 1-2 minutes on each side until golden. Repeat with remaining batter.
  5. Layer crêpes with whipped cream and crushed speculoos in between each.
  6. Chill the cake for at least 2 hours before serving.

Notes

  • For a richer flavor, use almond milk instead of regular milk.
  • Decorate the top with more crushed speculoos and whipped cream before serving.
