  • 2 cups vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  2. In another bowl, beat the eggs and then stir in the milk and vanilla extract.
  3. Combine the wet and dry ingredients until just mixed.
  4. Heat the oil in a deep fryer or large pot to 375°F (190°C).
  5. Drop rounded tablespoons of batter into the hot oil, frying until golden brown on both sides.
  6. Remove beignets from the oil and drain on paper towels.
  7. Dust with powdered sugar before serving.
