  • 4 slices turkey bacon
  • 2 large eggs
  • 2 cups diced potatoes
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the turkey bacon until crispy.
  2. Remove the bacon and set aside, using the drippings to sauté the potatoes, onion, and bell pepper until tender.
  3. Add the cooked bacon back into the skillet.
  4. Make two wells in the mixture and crack an egg into each well.
  5. Cover and cook until the eggs are set to your liking.
