Tomato Zucchini Pasta

A delightful summer dish featuring fresh tomatoes and zucchini.

Ingredients

  • 2 cups chopped tomatoes
  • 1 large zucchini, sliced
  • 8 ounces pasta of choice
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh basil, chopped
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute.
  3. Add chopped tomatoes and zucchini to the skillet. Sauté for about 5 minutes until tender.
  4. Stir in cooked pasta, salt, and pepper. Mix well.
  5. Remove from heat and garnish with fresh basil and Parmesan cheese before serving.
