  • 8 ounces spaghetti
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 can (14.5 ounces) diced tomatoes
  • 1 pound salmon fillet, skinless
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook spaghetti according to package instructions.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté until fragrant.
  4. Add fresh spinach and cook until wilted.
  5. Stir in diced tomatoes and season with salt and pepper.
  6. Place the salmon fillet in the skillet and cook until it’s opaque and flakes easily with a fork.
  7. Toss the cooked spaghetti in the skillet to combine all the ingredients.
