  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup strong brewed coffee
  • 1/2 cup mascarpone cheese
  • 2 tablespoons coffee liqueur (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a bowl, mix melted butter and sugar until well combined.
  3. Add eggs and vanilla extract, whisking until smooth.
  4. In another bowl, combine flour and cocoa powder, then gradually add to the wet mixture.
  5. Stir in brewed coffee until fully incorporated.
  6. Pour the batter into the prepared dish and bake for 25-30 minutes.
  7. While the brownies cool, mix mascarpone cheese and coffee liqueur in a bowl.
  8. Spread the mascarpone mixture on top of the cooled brownies.
  9. Refrigerate for at least 1 hour before serving.
