The Best Chicken Ramen Noodles [Of All Time]

Ingredients

  • 4 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon miso paste
  • 2 chicken breasts
  • 2 packs ramen noodles
  • 1 green onion, chopped
  • 2 eggs
  • 2 tablespoons sesame oil
  • 1 cup mushrooms, sliced
  • 1 cup bok choy, chopped

Instructions

  1. In a pot, heat sesame oil over medium heat.
  2. Add chicken breasts and cook until browned.
  3. Pour in chicken broth, soy sauce, and miso paste, stirring until combined.
  4. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove chicken, shred it, and return to the pot.
  6. Add mushrooms and bok choy, cooking until softened.
  7. In a separate pot, boil eggs for 7 minutes for a soft center.
  8. Prepare ramen noodles according to package instructions.
  9. Assemble by placing noodles in bowls, ladling broth over, and topping with chicken, greens, and halved eggs.
  10. Garnish with chopped green onions.
