- 200 grams rice noodles
- 1 tablespoon vegetable oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon red curry paste
- 400 ml coconut milk
- 500 ml vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon brown sugar
- 100 grams bok choy, chopped
- 1 lime, juiced
- Fresh cilantro for garnish
- Cook the rice noodles according to package instructions; drain and set aside.
- In a large pot, heat vegetable oil over medium heat. Add onion and garlic, and sauté until translucent.
- Stir in red curry paste and cook for 1 minute, until fragrant.
- Add coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
- Add soy sauce, brown sugar, and bok choy. Cook for 5 minutes until bok choy is wilted.
- Stir in cooked noodles and lime juice, and heat through.
- Serve hot, garnished with fresh cilantro.
Notes
- Adjust the spice level by adding more or less red curry paste.
- For extra protein, add tofu or chicken.
