Thai Red Curry Noodle Soup

A delightful blend of flavors, this Thai Red Curry Noodle Soup is easy to make at home.

Ingredients

  • 200 grams rice noodles
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 400 ml coconut milk
  • 500 ml vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon brown sugar
  • 100 grams bok choy, chopped
  • 1 lime, juiced
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions; drain and set aside.
  2. In a large pot, heat vegetable oil over medium heat. Add onion and garlic, and sauté until translucent.
  3. Stir in red curry paste and cook for 1 minute, until fragrant.
  4. Add coconut milk and vegetable broth, stirring to combine. Bring to a simmer.
  5. Add soy sauce, brown sugar, and bok choy. Cook for 5 minutes until bok choy is wilted.
  6. Stir in cooked noodles and lime juice, and heat through.
  7. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spice level by adding more or less red curry paste.
  • For extra protein, add tofu or chicken.
