Thai Green Noodle Soup

A warming Thai green noodle soup packed with flavors and comforting slurps.

  • 200 grams rice noodles
  • 1 tablespoon green curry paste
  • 1 can coconut milk
  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 cup bean sprouts
  • 1 red bell pepper, sliced
  • 2 green onions, chopped
  • 2 tablespoons lime juice

Instructions

  1. Cook rice noodles according to package instructions and set aside.
  2. In a large pot, combine vegetable broth and bring to a simmer.
  3. Add green curry paste and coconut milk, stirring until combined.
  4. Add mushrooms, bell pepper, and cook for 5 minutes.
  5. Stir in cooked noodles and bean sprouts, heating through.
  6. Finish with lime juice and garnish with green onions before serving.

Notes

  • Feel free to add protein such as tofu or shrimp for extra heartiness.
  • Adjust the spice level by adding more or less curry paste.
