  • 1 cup cooked chicken, shredded
  • 1 cup cucumbers, thinly sliced
  • 1 cup carrots, julienned
  • 1/2 cup red bell pepper, sliced
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • 1 teaspoon sesame oil

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine the chicken, cucumbers, carrots, red bell pepper, and cilantro.
  3. In a small bowl, whisk together the lime juice, soy sauce, fish sauce, honey, garlic, and sesame oil.
  4. Pour the dressing over the salad and toss well to combine.
  5. Serve chilled or at room temperature.
