A delicious Mediterranean-inspired vegetable pasta bake that’s easy to prepare and perfect for family dinners.

  • 8 ounces penne pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the penne pasta according to package instructions, then drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. Stir in the bell pepper, zucchini, and cherry tomatoes. Cook until the vegetables are tender.
  5. Add the cooked pasta, oregano, salt, and pepper to the skillet, stirring to combine.
  6. Pour the marinara sauce over the pasta mixture and mix well.
  7. Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let cool for a few minutes before serving.

Notes

  • For extra flavor, add fresh basil on top before serving.
