- 8 ounces penne pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 cup cherry tomatoes, halved
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Preheat your oven to 375°F (190°C).
- Cook the penne pasta according to package instructions, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Stir in the bell pepper, zucchini, and cherry tomatoes. Cook until the vegetables are tender.
- Add the cooked pasta, oregano, salt, and pepper to the skillet, stirring to combine.
- Pour the marinara sauce over the pasta mixture and mix well.
- Transfer the mixture to a baking dish and top with shredded mozzarella cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
