Tasty and Healthy Eggplant Borani is a delightful dish that combines a rich flavor profile with nutritious ingredients.

Ingredients

  • 2 medium eggplants
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the eggplants in half lengthwise and brush the cut surfaces with olive oil.
  3. Place the eggplants cut side down on a baking sheet and roast in the oven for about 30 minutes, until soft.
  4. Remove eggplants from the oven and let them cool slightly before scooping out the flesh into a bowl.
  5. Add yogurt, garlic, cumin, salt, and pepper to the eggplant flesh and mix until smooth.
  6. Serve in a dish and garnish with chopped parsley and walnuts.

Notes

  • For a spicier version, add a pinch of cayenne pepper.
  • Serve with warm pita bread for a complete meal.
