  • 1 cup mango puree
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 green onions for garnish

Instructions

  1. In a bowl, mix together the mango puree, soy sauce, honey, ginger, garlic, sesame oil, rice vinegar, black pepper, and salt to create the marinade.
  2. Add the chicken thighs to the marinade and let them soak for at least 30 minutes, ideally overnight.
  3. Preheat your grill or oven to medium-high heat.
  4. Remove the chicken from the marinade and grill or bake until fully cooked, approximately 25-30 minutes, basting occasionally with leftover marinade.
  5. Garnish with chopped green onions before serving.

Notes

  • Adjust the sweetness by adding more or less honey.
  • For a spicier kick, consider adding a dash of chili flakes.
