A delicious and easy-to-make gratin highlighting the flavors of fall with sweet potatoes and cranberries.

  • 2 pounds sweet potatoes
  • 1 cup fresh cranberries
  • 1/2 cup heavy cream
  • 1/2 cup shredded cheese (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes thinly.
  3. In a large bowl, combine the sweet potatoes, cranberries, salt, pepper, and thyme.
  4. Transfer the mixture to a greased baking dish.
  5. Pour the heavy cream over the top and sprinkle with shredded cheese if using.
  6. Bake for 45-50 minutes until the sweet potatoes are tender.

Notes

  • For added flavor, try adding a pinch of nutmeg.
