A vibrant and easy summer dish made with fresh tomatoes and creamy burrata.

Ingredients

  • 8 ounces pasta of your choice
  • 2 cups cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh basil leaves
  • 8 ounces burrata cheese

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat and add the halved cherry tomatoes.
  3. Season with salt and black pepper, and cook until tomatoes are soft and burst.
  4. Add the cooked pasta and fresh basil to the skillet, tossing to combine.
  5. Serve topped with pieces of burrata cheese.

Notes

  • Use any pasta shape you prefer.
  • Fresh mozzarella can be substituted for burrata.
