  • 2 butternut squash
  • 4 ounces turkey bacon
  • 2 cups fresh spinach
  • 1 cup shredded cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the butternut squash in half and scoop out the seeds.
  3. Cook the turkey bacon until crispy, then chop it up.
  4. Sauté the spinach in olive oil until wilted.
  5. Combine the bacon, spinach, and cheese in a bowl.
  6. Stuff the mixture into the butternut squash halves.
  7. Place the stuffed squash on a baking sheet and bake for 30-35 minutes.
