  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, pureed
  • ¼ cup strawberry jam

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla.
  4. Fold in the strawberry puree and jam, swirled together.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Bake for 50-60 minutes until set. Let cool before refrigerating for at least 4 hours.
