A fun and creative twist on traditional strawberry shortcake, served in sushi roll form!

Ingredients

  • 1 cup sushi rice
  • 1 1/2 cups water
  • 1/4 cup sugar
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon vanilla extract
  • 1 cup strawberries, sliced
  • 1/2 cup whipped cream
  • 4 sheets nori
  • 1/4 cup powdered sugar (for dusting)

Instructions

  1. Rinse sushi rice until water runs clear. Combine rice and water in a rice cooker and cook.
  2. Once cooked, mix in sugar, rice vinegar, and vanilla extract. Let cool.
  3. On a bamboo sushi mat, place a sheet of nori and spread a layer of sushi rice over it.
  4. Lay sliced strawberries and a dollop of whipped cream in a line across the center.
  5. Carefully roll the nori using the mat, applying gentle pressure to form a tight roll.
  6. Slice the roll into bite-sized pieces and dust with powdered sugar before serving.

Notes

  • Try adding other fruits like bananas or blueberries for variation.
  • Ensure the rice is sticky enough for easy rolling.
