  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 1 package (8 oz) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup fresh strawberries, chopped
  • 2 cups mini taco shells
  • 1/2 cup sliced almonds, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs, melted butter, and sugar.
  3. Press the mixture into the bottom and sides of mini taco shell molds.
  4. Bake for 8-10 minutes, until golden brown. Let cool.
  5. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth.
  6. Fold in whipped cream and chopped strawberries.
  7. Fill the cooled taco shells with the cheesecake mixture.
  8. Top with sliced almonds for garnish.

Notes

  • For extra crunch, you can add crushed freeze-dried strawberries on top.
  • This recipe can be made ahead of time and chilled before serving.
