- 1 pound boneless, skinless chicken breasts
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup salsa
- 1 packet taco seasoning
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 avocado, diced
- 1/4 cup cilantro, chopped
- Place the chicken breasts in the slow cooker.
- Add black beans, corn, salsa, and taco seasoning on top of the chicken.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, shred the chicken with two forks and mix everything well.
