- 3 pounds beef chuck roast
- 1 onion, chopped
- 4 cloves garlic, minced
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 1 teaspoon black pepper
- 4 cups beef broth
- 2 tablespoons apple cider vinegar
- Prepare the dried chiles by removing stems and seeds, then soak them in warm water for 15 minutes.
- In a blender, combine soaked chiles, onion, garlic, cumin, oregano, salt, and pepper. Blend until smooth.
