  • 3 pounds beef chuck roast
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cups beef broth
  • 2 tablespoons apple cider vinegar

Instructions

  1. Prepare the dried chiles by removing stems and seeds, then soak them in warm water for 15 minutes.
  2. In a blender, combine soaked chiles, onion, garlic, cumin, oregano, salt, and pepper. Blend until smooth.
  3. Place the beef chuck roast in the slow cooker and pour the sauce over it.
  4. Add the beef broth and apple cider vinegar to the slow cooker.
  5. Cover and cook on low for 8 hours, or until the beef is tender.
  6. Once cooked, shred the beef with two forks and stir it into the sauce.
