This Simple Lasagna Soup is a delicious and comforting dish that combines sausage and ground beef for a hearty meal.

  • 1 pound ground beef
  • 1 pound Italian sausage
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 8 ounces lasagna noodles, broken
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped

Instructions

  1. In a large pot, brown the ground beef and Italian sausage over medium heat.
  2. Add the onion and garlic, cooking until the onion is translucent.
  3. Stir in crushed tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
  4. Add the broken lasagna noodles and simmer for about 10 minutes or until noodles are tender.
  5. Stir in ricotta cheese until well combined.
  6. Serve hot, topped with mozzarella, Parmesan cheese, and fresh basil.

Notes

  • This soup can be made ahead of time and stored in the refrigerator.
  • It tastes even better the next day when the flavors have melded.
