Roasted Strawberry Ice Cream

  • 1 cup granulated sugar
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and hull the strawberries, then place them on a baking sheet.
  3. Sprinkle the strawberries with half of the sugar and roast in the oven for about 20 minutes.
  4. Let the strawberries cool, then mash them with a fork.
  5. In a mixing bowl, combine heavy cream, whole milk, remaining sugar, vanilla extract, and salt.
  6. Add the roasted strawberries and mix well.
  7. Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions.
  8. Freeze for at least 4 hours before serving.

Notes

  • For extra flavor, add a squeeze of lemon juice to the strawberries before roasting.
