  • 1 medium pumpkin
  • 1 cup plain yogurt
  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the pumpkin in half, remove the seeds, and slice into wedges.
  3. Place the pumpkin wedges on a baking sheet, drizzle with olive oil, and season with salt, pepper, and cumin.
  4. Roast for 25-30 minutes, or until tender.
  5. While the pumpkin is roasting, toast the pine nuts in a dry skillet until golden brown.
  6. In a bowl, mix the yogurt with minced garlic.
  7. Once the pumpkin is done, serve with yogurt sauce drizzled on top and sprinkled with toasted pine nuts.
