  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 8 oz cream cheese, softened
  • 2 cups sour cream
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2 tbsp red food coloring
  • 1 cup sliced fresh strawberries

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a mixing bowl, combine the crushed graham crackers and melted butter. Press the mixture into the bottom of a springform pan.
  3. In a separate bowl, beat together the sugar and cream cheese until smooth. Add the sour cream and vanilla, mixing well.
  4. Add the eggs one at a time, mixing after each addition. Stir in the red food coloring until fully incorporated.
  5. Pour the cheesecake batter over the crust in the springform pan.
  6. Bake in the preheated oven for about 50 minutes, or until the edges are set.
  7. Allow to cool at room temperature before refrigerating for at least 4 hours.
  8. Serve topped with fresh strawberries.
