  • 6 slices turkey bacon
  • 1 cup chopped onion

  • 1 cup heavy cream

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble the bacon.
  2. In the same pot, add onion and garlic, sautéing until translucent.
  3. Add the diced potatoes and chicken broth, bringing to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in heavy cream, salt, and pepper.
  6. Blend if desired for a creamy texture, and top with crumbled bacon and parsley before serving.
