Ingredients

  • 1 cup pistachio nuts
  • 2 cups cream cheese
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. In a bowl, combine the graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  2. In another bowl, beat the cream cheese until smooth. Gradually add powdered sugar, mixing well.
  3. Whip the heavy cream with vanilla until stiff peaks form. Gently fold into the cream cheese mixture.
  4. Add finely ground pistachio nuts to the mixture and fold until combined.
  5. Pour the cheesecake mixture over the crust and smooth the top.
  6. Refrigerate for at least 4 hours or until set. Serve chilled.

Notes

  • For a stronger pistachio flavor, use pistachio extract in addition to the nuts.
  • Top with whipped cream and crushed pistachios for garnish.
