A delicious pavlova topped with tangy lemon curd and fresh berries, perfect for any occasion.

Ingredients

  • 4 large egg whites
  • 1 cup granulated sugar
  • 1 teaspoon white vinegar
  • 1 teaspoon cornstarch
  • 1 1/2 cups heavy cream
  • 1/2 cup lemon curd
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. Beat the egg whites until soft peaks form.
  3. Gradually add sugar, beating until stiff peaks form.
  4. Fold in vinegar and cornstarch.
  5. Spread the mixture onto a parchment-lined baking sheet.
  6. Bake for 1 hour, then turn off the oven and let cool inside.
  7. Once cooled, top with whipped cream and lemon curd.
  8. Add mixed berries on top and serve.
