- 4 slices turkey bacon, chopped
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 cup broccoli florets
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- Add the sliced bell pepper, zucchini, and broccoli to the pot and sauté until tender.
- Stir in the minced garlic and cook for another minute.
- Add the pasta, vegetable broth, Italian seasoning, salt, and pepper. Bring to a boil.
