A delicious and healthy twist on the classic Cobb salad that follows Paleo guidelines.

Ingredients

  • 2 cups chopped romaine lettuce
  • 1 cup grilled chicken, diced
  • 4 slices turkey bacon, cooked and crumbled
  • 2 hard-boiled eggs, chopped
  • 1 avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup blue cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, grilled chicken, turkey bacon, hard-boiled eggs, avocado, cherry tomatoes, red onion, and blue cheese.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
