  • 4 ripe bananas
  • 6 large eggs
  • 2 cups milk
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts

Instructions

  1. In a large bowl, whisk together eggs, milk, cream, brown sugar, vanilla, cinnamon, and salt.
  2. Cut the brioche into cubes and layer half in a greased baking dish.
  3. Slice bananas and distribute half over the bread cubes.
  4. Pour half the egg mixture over the bread and bananas.
  5. Repeat layering with remaining bread, bananas, and egg mixture.
  6. Cover and refrigerate overnight.
  7. Preheat the oven to 350°F (175°C).
  8. Bake for 45-50 minutes until golden and set.
