- 12 ounces pasta
- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 2 cups spinach
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups vegetable broth
- In a large pot, heat olive oil over medium heat.
- Add onions and garlic, sauté until onions are translucent.
- Stir in bell pepper and cook for another 3 minutes.
- Add the pasta, spinach, Italian seasoning, salt, and pepper.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for about 10-12 minutes until the pasta is al dente.
