A delicious and easy recipe for a one-pot shawarma chicken and rice meal that’s perfect for dinner.

  • 1 pound chicken thighs
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 2 tablespoons shawarma spice mix
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 lemon, juiced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion, red bell pepper, and garlic, sauté until softened.
  3. Stir in shawarma spice mix and cook for 1 minute.
  4. Add chicken thighs and brown on both sides.
  5. Pour in chicken broth and bring to a simmer.
  6. Add jasmine rice, stir, and cover the pot.
  7. Cook on low heat for 20 minutes or until rice is tender.
  8. Fluff the rice and serve with lemon juice.
