This One Pot Shawarma Chicken and Rice is an easy and flavorful dinner option that combines tender chicken, aromatic spices, and fluffy rice in one pot.

  • 2 cups basmati rice
  • 1.5 pounds chicken thighs, boneless and skinless
  • 2 tablespoons shawarma spice mix
  • 4 cups chicken broth
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add the onions and garlic, sauté until translucent.
  3. Stir in the chicken thighs and shawarma spice mix, cooking until browned.
  4. Add the rice and chicken broth, bringing to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
