1.5 pounds chicken thighs, boneless and skinless
2 tablespoons shawarma spice mix
4 cups chicken broth
1 medium onion, diced
3 cloves garlic, minced
2 tablespoons olive oil
1 cup cherry tomatoes, halved
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Instructions
In a large pot, heat olive oil over medium heat.
Add the onions and garlic, sauté until translucent.
Stir in the chicken thighs and shawarma spice mix, cooking until browned.
Add the rice and chicken broth, bringing to a boil.
Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
