- 2 cups jasmine rice
- 4 cups chicken broth
- 1 pound chicken thighs, boneless and skinless
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 2 cups mixed vegetables (carrots, peas, bell peppers)
- 3 green onions, chopped
- 2 cloves garlic, minced
- In a large pot, heat sesame oil over medium heat. Add garlic and sauté until fragrant.
- Add chicken thighs and cook until browned on all sides.
- Stir in rice, broth, soy sauce, and hoisin sauce. Bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Add mixed vegetables during the last 5 minutes of cooking. Remove from heat and let sit covered for another 5 minutes.
- Garnish with chopped green onions before serving.
Notes
- For added flavor, marinate the chicken in soy sauce and hoisin sauce before cooking.
