  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 2 cups mixed vegetables (carrots, peas, bell peppers)
  • 3 green onions, chopped
  • 2 cloves garlic, minced

Instructions

  1. In a large pot, heat sesame oil over medium heat. Add garlic and sauté until fragrant.
  2. Add chicken thighs and cook until browned on all sides.
  3. Stir in rice, broth, soy sauce, and hoisin sauce. Bring to a boil.
  4. Reduce heat, cover, and simmer for 20 minutes.
  5. Add mixed vegetables during the last 5 minutes of cooking. Remove from heat and let sit covered for another 5 minutes.
  6. Garnish with chopped green onions before serving.

Notes

  • For added flavor, marinate the chicken in soy sauce and hoisin sauce before cooking.
  • This dish can be customized with your favorite vegetables.
