One Pot Chicken and Rice

Ingredients

  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 pound chicken thighs, boneless and skinless
  • 1 cup peas
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and cook until fragrant.
  4. Add chicken thighs and brown on both sides.
  5. Sprinkle paprika, salt, and pepper over the chicken.
  6. Add rice and pour in chicken broth.
  7. Bring to a boil, then reduce heat to low and cover.
  8. Cook for 20 minutes or until rice is tender.
  9. Stir in peas and cover for an additional 5 minutes.

Notes

  • For extra flavor, marinate the chicken in spices overnight.
