This One Pan Shakshuka recipe features poached eggs in a spicy tomato sauce, perfect for breakfast or brunch.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 can (28 ounces) crushed tomatoes
  • 4 large eggs
  • salt to taste
  • pepper to taste
  • fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the diced onion and bell pepper, cook until soft.
  3. Stir in the garlic, cumin, and paprika, cooking for another minute.
  4. Add in the crushed tomatoes, season with salt and pepper, and simmer for 10 minutes.
  5. Make small wells in the tomato mixture and crack the eggs into each well.
  6. Cover the pan and cook until the eggs are set.
  7. Garnish with fresh parsley and serve.
