Oatmeal Lemon Crumble Bars

A delightful blend of zesty lemon and hearty oatmeal makes these crumble bars a must-try!

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large lemons, juiced and zested
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.
  3. Add melted butter, lemon juice, and zest to the dry ingredients and mix until crumbly.
  4. Press half of the mixture into a greased baking pan.
  5. Spread lemon filling (made from remaining lemon juice and zest) over the crust.
  6. Sprinkle the remaining crumble mixture on top.
  7. Bake for 25-30 minutes or until golden brown.
  8. Let cool before cutting into bars.

Notes

  • For an extra zesty flavor, add a bit more lemon zest to the filling.
