- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large lemons, juiced and zested
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Preheat the oven to 350°F (175°C).
- In a bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt.
- Add melted butter, lemon juice, and zest to the dry ingredients and mix until crumbly.
- Press half of the mixture into a greased baking pan.
- Spread lemon filling (made from remaining lemon juice and zest) over the crust.
- Sprinkle the remaining crumble mixture on top.
- Bake for 25-30 minutes or until golden brown.
- Let cool before cutting into bars.
