No-Bake Gingerbread Cheesecake Cups for the Winter Holidays

Ingredients

  • 1 cup gingerbread cookies, crushed
  • ½ cup unsalted butter, melted
  • 1 cup cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup whipped cream
  • 1 tsp ground ginger
  • ½ tsp ground cinnamon

Instructions

  1. In a bowl, combine crushed gingerbread cookies and melted butter.
  2. Press the mixture into the bottom of dessert cups.
  3. In another bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Fold in whipped cream, ground ginger, and ground cinnamon.
  5. Layer the cream cheese mixture on top of the crust in the dessert cups.
  6. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • Make sure the cream cheese is softened for easier mixing.
  • These dessert cups can be made a day ahead for convenience.
