A delicious and easy No Bake Berry Icebox Cake that will impress your friends and family.

Ingredients

  • 2 cups heavy cream
  • 1 cup mascarpone cheese
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups mixed berries (strawberries, blueberries, raspberries)
  • 1 package graham crackers

Instructions

  1. In a large bowl, whip the heavy cream until stiff peaks form.
  2. In another bowl, combine mascarpone cheese, powdered sugar, and vanilla extract.
  3. Gently fold the whipped cream into the mascarpone mixture until well combined.
  4. Layer graham crackers at the bottom of a dish.
  5. Spread a layer of the mascarpone mixture over the crackers.
  6. Add a layer of mixed berries on top.
  7. Repeat the layers until all ingredients are used, finishing with the mascarpone mixture on top.
  8. Refrigerate for at least 4 hours or overnight to allow the flavors to meld.

Notes

  • For best results, use fresh berries.
  • Can be topped with whipped cream before serving.
