- 4 servings chicken thighs
- 1 cup long grain rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1 teaspoon paprika
- 1/2 teaspoon turmeric
- 1 can diced tomatoes (14.5 oz)
- 2 cups chicken broth
- 1 cup frozen peas
- 1/4 cup raisins
- Salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Add chicken thighs, season with salt and pepper, and brown on both sides.
- Remove chicken and set aside. In the same pot, add onion and garlic; sauté until soft.
- Add cumin, cinnamon, paprika, and turmeric; cook for another minute.
- Stir in the rice, diced tomatoes, and chicken broth.
- Return the chicken to the pot, bring to a boil, then reduce heat and cover.
- Simmer for 20 minutes until rice is tender.
- In the last 5 minutes, add peas and raisins.
- Fluff rice with a fork before serving.
Notes
- For extra flavor, marinate the chicken with spices the night before.
- This dish is great for meal prep, and leftovers can be refrigerated.
