  • 4 servings chicken thighs
  • 1 cup long grain rice
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1/4 cup raisins
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken thighs, season with salt and pepper, and brown on both sides.
  3. Remove chicken and set aside. In the same pot, add onion and garlic; sauté until soft.
  4. Add cumin, cinnamon, paprika, and turmeric; cook for another minute.
  5. Stir in the rice, diced tomatoes, and chicken broth.
  6. Return the chicken to the pot, bring to a boil, then reduce heat and cover.
  7. Simmer for 20 minutes until rice is tender.
  8. In the last 5 minutes, add peas and raisins.
  9. Fluff rice with a fork before serving.

Notes

  • For extra flavor, marinate the chicken with spices the night before.
  • This dish is great for meal prep, and leftovers can be refrigerated.
